Summer Squash Recipes

During the first few weeks of our 2023 summer CSA, our members were inundated with a seasonal favorite: summer squash. We were bringing in over 100lbs a week and filling our members boxes with this nourishing veggie. Members were asked to participate in a summer squash recipe challenge where they had to make a dish featuring summer squash and share a photo and the written recipe with us to be entered into a drawing for some farmers market treats!

Zucchini Lasagna

Bottom of pan lay in zucchini (like lasagna noodles)
Spoon on ricotta cheese
Layer in: Burger and onions, Spaghetti sauce, Italian cheese, Zucchini, Rest of sauce, Rest of Italian cheese
